I’ve tried to make vegan cheese sauce out of vegetables (this recipe) and while I love it, nothing beats this 5-Ingredient Vegan White Queso. When you want the real deal, look no further because this is it.
There are different types of cheesy vegan goodness like a healthy mac and cheese sauce (made out of veggies), dippable nacho cheese and this dreamy white queso. All are wondrously delicious and now I have all 3 here on the blog! I feel complete. Also quick side note, this white sauce would be an amazing swap in my vegan mexican seven-layer dip. Just sayin’, and now dreaming about it.

Here are the five ingredient’s you’ll need: (well actually six but not counting water ha).
- cashews
- small can of diced green chiles
- nutritional yeast
- lemon (or apple cider vinegar)
- sea salt
- water
Blend all ingredients in a small blender until creamy (like a Nutribullet) and serve. Ready in 5 minutes. It literally couldn’t be easier. I’m trying to make my recipes as easy as possible because life is crazy town, you know?? I’ll admit some of my recipes can be more labor-intensive (although worth it) but all recipes from here on out are about ease, accessibility and plant-based deliciousness. That’s all we have time for!
Serve it over roasted or steamed veggies. Use it on nachos or dip tortilla chips/pretzels in it. Serve it over fajitas (like this Sheet Pan Fajita recipe!) or veggie tacos. There are so many ways to devour this vegan white cheese sauce and I can’t wait to incorporate it into more recipes on here!!

The dreamiest vegan white queso cheese sauce you ever did see.
Ingredients
1 cup cashews (soaked in hot water for 5 minutes)
1/2 cup water
4-ounce can of diced green chiles
1/4 cup nutritional yeast
1 tablespoon lemon juice (or apple cider vinegar)
1/2 teaspoon sea salt
Instructions
Soak cashews for 5-10 minutes in hot water. Drain and rinse.
Add all ingredients to blender jar.
Blend until smooth and creamy.
Enjoy!

Tried this tonight with the sheet pan fajitas. Really yummy! One question though, mine turned out looking light green instead of white. Tasted great, but I would love to have the white queso look. Any ideas or suggestions?
