Yikes, it’s been a hot minute…

Literally the day after arriving home from our Mexico vacay last week, the blog crashed…
After many teary-eyed meltdowns, lots of troubleshooting, hours and hours of phone calls with Bluehost (who I now despise) and a handful of frustrating/confusing technical mishaps, I decided to start fresh with a brand new theme and re-build the blog on my own. Many of you messaged me when the blog was down, saying you were trying to get recipes and I tried to message all of you back with the recipe you needed, but just know I wasn’t sleeping – I was working to get it back up!
Without getting into too much tech-y stuff (because I’m more confused now than ever before with all of the backend deets that make up a website), I am in the market for a go-to tech person who actually cares and can help me improve the blog. I’ve been SO disappointed with Bluehost and how they literally left me in the dark and couldn’t/didn’t want to figure out what was causing the problem. One girl left me in the middle of a phone call because her shift ended… I’ve reached out to friends, bloggers and have been searching around but I would much rather be referred to someone over finding a random tech person online, so if you know of anyone who can help with server problems, redirects, optimization and cleaning up database tables amongst other things.. please send me an email!!! Anyways.. the blog is back up and running and I hope you love the new design as much as I do. If you click the Recipes tab above, you’ll be brought to a fun recipe index where you can check off what kind of recipe you’re looking for which is by far, my most favorite part! There’s also a built-in shop that I’ll be setting up for my ebooks and other items I plan on launching (someday soon!) but I’m still in the midst of adding/ changing a few things around, so bear with me!!
In the meantime, I’m happy to be back, writing to all of you 🙂 and am in the middle of creating some yummy Valentine’s Day treats that I’ll be sharing this week!
But first, I want to look back on our trip to Puerto Vallarta. Terry and I traded cold Chicago temps for the hot sun – and it was everything!
Before we took off on an early morning flight, I picked up a berry smoothie. Can we just talk about how Chicago O’Hare airport has a little smoothie shop called B-Smooth Smoothies (in the interntional terminal) – and they carry Vega protein? Say whaaa?! This is exciting for the vegan community, no?! I’ve been seeing more and more plant based protein options everywhere and it makes me so happy! I ordered the ‘Berry Delicious’ smoothie with strawberries, blueberries, banana, soymilk (the only dairy-free milk they had) and Vega One protein. Thank you O’Hare!
P.S. – My vegan leather tote is from Tutilo and I’m obsessed (get it in black on amazon here) because it has a separate laptop pocket and is organized/put together so well.

Breakfast each morning was toast with jelly and whichever fruit was in season. In January, it’s papaya and pineapple! Along with coffee and fresh green juice too.
Terry rented us a boat for the day with a captain to take us around! We saw momma and baby whales (!!!) went hiking through a small village up the mountain to a hidden waterfall and went snorkeling at los arcos – best day ever!
If you look closely – you can spot Terry snorkeling!
For my birthday dinner, Terry found a veggie buffet with vegan food! He’s a trooper for taking me here. The food was delish!
(The best) rice and black beans, a fried chickpea fritter, shredded salad and some type of guava drink. SO GOOD! We def went back for seconds…
The most incredible sunsets!
This little getaway was such a treat and we enjoyed every second… but seriously how could you not?! Puerto Vallarta has the most charming downtown with old cobblestone streets and endless restaurants/bars you could walk to. We walked all over every night, venturing around, discovering cute little shops and side streets. Everyone was friendly and it felt super safe! Plus, the mountains in the background are breathtaking. One night, we took a taxi to a restaurant up the mountains for dinner called El Palomar – an experience I will never forget!
