What I love about this plant based toast is the simplicity but also how deliciously filling and detoxifying it is, at the same time. I’m always looking to detox my estrogen as I’m very sensitive to estrogen dominance. I have to take all precautions to keep it under control (as least now, while I’m parasite cleansing). I’ve found the parasite detox can often exacerbate certain PMS symptoms due to the release of heavy metals and toxins from parasite die-off. So, I’m taking all necessary measures to keep my cycle on track and keep it healthy!
And all of that starts with proper whole food nutrition!
This Chickpea Avocado Toast is pretty self-explanatory but sometimes it’s nice to have new easy lunch ideas, you know? I know I can get stuck in a rut so I love having an option like this that covers all the bases. Protein, fiber, fat and carb, all for satiety, along with micronutrients to help detox and keep our systems functioning optimally.
The chickpeas offer protein and fiber, the avocado offers healthy fat and the real sourdough bread offers the carb. Of course you can use whatever bread you want, you could even use rice cakes (that would be more of a snack) but I love sourdough because of it’s fermentation process that makes it easier to digest. It is local and made the old school way, not with a sourdough starter – this is important! After spreading the avocado on the toast and sprinkling with chickpeas, I added some broccoli microgreens for estrogen detox. Broccoli sprouts are even better for this!
Next come the sunflower seeds to support progesterone production (could also use sesame seeds). This toast is meant for the luteal phase. If you want to make it in the menstrual or follicular phase, switch the seeds to pumpkin seeds to support estrogen! After that I add some red pepper flakes and fresh lemon juice and voil?! The most delicious, satisfying toast that checks all the boxes and will keep you happy four hours.

Ingredients
2 pieces toast of choice (I used sourdough)
1/2 avocado, divided
1/3 cup chickpeas, divided
2 handfuls of microgreens or sprouts, divided
2 tablespoons sunflower seeds, divided (or sesame seeds)
spritz of lemon (optional)
red pepper flakes (optional)
Instructions
Toast your bread and then assemble each piece starting with the avocado, chickpeas, greens or sprouts, sunflower seeds, lemon and red pepper flakes.

Yum this looks delicious! Quick question I thought you were gluten free? Is sourdough bread gluten free? I also don’t eat gluten and have a hard time finding a bread that I like, that’s gluten free and also healthy! Tips?

I am gluten free except for this bread! It is made the old fashioned way, not with a yeast starter, so something about the fermentation process for the sourdough makes it so it doesn’t bother me! It is the one exception 🙂 I think there is gluten free option though. I recommend looking at the ingredients and choosing a bread without starter so you know it is made the real way!
