That’s where I’m at right now… trying to take in what’s left of December and wishing it would linger a little longer. Which is why I’m very into this vegan Holiday White Peppermint Smoothie!
Between moving, getting settled into the new house, the renovations we’re doing, work stuff and getting everything done in time for Christmas, I feel like I haven’t done anything holiday-ish this season at all because it’s the busiest we’ve ever been… which makes me so sad! We finally got a tree on Sunday that I finished decorating on Tuesday… SO late to the game. At least we got one (our first tree together!) and can enjoy it for a little while, but we didn’t do lights outside or anything so I’m feeling totally disconnected from Christmas this year.
I’ve been hustling to get my Vegan Hormone Healing eBook ready to be released in time for the new year so that’s been taking up my work days which is why there hasn’t been much happening this month here on the blog. I’m a one-woman show but trying my best!! Plus, it’s totally worth the wait because this eBook is super special and unique – unlike anything I’ve ever done. Description
Vegan ‘Holiday White Peppermint Smoothie’. Creamy and frosty-like with hints of peppermint flavor, this healthy breakfast smoothie is full of healthy fats and protein to keep you going this holiday season!
Ingredients
- 1 cup unsweetened coconut or almond milk
- 1 cup frozen cauliflower
- 1/2 frozen banana
- 1 scoop vanilla plant protein
- 2 tablespoons coconut butter (or 1/4 cup unsweetened shredded coconut)
- 1/4 teaspoon peppermint extract
optional add-ins
- 1 tablespoon chia seeds
- 1 tablespoon ground flaxseed
Instructions
- Add all ingredients to a high speed blender.
- Blend until smooth and creamy.
- Top with shredded coconut (looks like snow!) and/or berries.
- Enjoy!

is the cauliflower necessary? or is it fine without it? im not usually that person ill try anything but it sounds strange haha 🙂

Hi Inga! Frozen cauliflower is not necessary, but it’s a great way to add in extra veggies as it’s virtually tasteless in this recipe! Plus, it helps to make it cold and creamy. Hope this helps!

I had never think combination of pepper mint with smoothie. It is so yummy to see. I tried it in my home last Sunday. My kids loved it and they are asking for many more. Thank you for sharing the recipe.
