Good morning lovelies! Happy Monday and hope you had a fab weekend 🙂
I did some major spring cleaning over the weekend. It felt SO GOOD to get rid of a bunch of things that were taking up space in my mind. I reorganized everything from my desk to my closet to my dressers and even the kitchen. Then I deep cleaned my whole apartment! This took the entire weekend but I was listening to music and Gary Vaynerchuck videos (a Skinny Confidential recommendation) and somehow it was very therapeutic (and exhausting!). Taz gets totally freaked out when I’m in cleaning mode and doesn’t know what to do so he follows me around because he correlates the process with moving, so I give him a lot of bones to stay out of my way haha.
Anyways, I wanted to bring you a few updates!
AVOCADO TOAST
Since I stayed at my parent’s house last week (they were on vacay), I took full advantage of their toaster because I don’t have have the space for one in my tiny studio apartment. So, I got creative with avocado toast (as shown above) – talk about best.thing.ever!! Clearly I have been missing out big time.
My fave combination was:
- one piece of toasted rye bread
- 1/2 avocado
- 6 slices of cucumber, halved
- sprinkling of hemp hearts
- pinch of red pepper flakes
You guys HAVE to try this creation. I ate way too many of them and now I need to figure out where I can stash a toaster in my apartment.
FITNESS MAG
Exciting news! Early last week, I was asked to be a contributor for Fitness Magazine! Of course I happily accepted as they asked me to write about all things vegan – it happened so fast and my first article was due this past Friday, which was then published yesterday (on Sunday). For my first article, they asked me to write on ‘How To Make Any Recipe Vegan’. You can read it here!! My article appears on their main page today which I’m super pumped about so head on over and give it a read – I know you will appreciate the vegan swaps and alternatives to animal products – plus I haven’t dedicated a full post to that topic here on the blog so it’s definitely worth the read. YOUTUBE
On Thursday of last week, I published a new vlog on YouTube where I talk about yoga, a blogging sales course that I’m loving and of course, I share everything I ate that day. This video was a fun one! I’m really loving the process of recording and editing and picking music and making videos in general. YouTube is somewhat of a new platform for me, learning wise, and I truly appreciate all of the daily vloggers out there because it is WORK! Lots of time and creativity and effort go into making videos. Big props to anyone doing it! I would really appreciate if you could take a few minutes to check it out (or watch it below) and subscribed to my channel, so you’re notified of any new videos I publish. You guys are the best! More videos to come this week 🙂

Getting rid of stuff you no longer use is so freeing. It just makes you feel lighter to do spring cleaning! I recently gave away a ton of clothing I haven’t worn in years and it makes me so happy to know others are using it.
The avo toast looks incredible – I usually like to sprinkle some chia seeds on mine for a little something extra 🙂
