Eating healthier means making adjustments to daily eating habits.
One of the simplest ways to make better food choices is to start by making your own food! The modern-day convenience of going out to eat has become such a bad habit. When I used to work in an office right after college, I would bring my own lunch maybe twice a week and eat out the rest of the days because that’s what everyone did at the office. One person would mention a restaurant and it always sounded good so a bunch of people would put in an order.
The thing is, you never know how much salt and oil could be in your meal because you didn’t make it.
Sure the food tastes good but over time, the heavy salt and oil attribute to unhealthy habits, low energy and poor nutrition.
After a while, my weekly pattern of ordering food got to be unhealthy and expensive. With overpriced food in the city on top of delivery charges and tips, I started bringing my own lunch more often and always felt better overall. Having more energy to finish out the work day after a nourishing lunch was way worth the extra 10 minutes of prep work at home.
I honestly don’t remember the last time I ate out for lunch! Occasionally I’ll stop at Whole Foods to make a salad but always end up wanting a few extra things like kombucha or snacks or vegan chocolate… I always cave in to the Whole Foods temptations. A much better option is to make lunch at home and bring it with to work or have in the car when you’re out and about for the day which is why I’m sharing this quick and healthy lunch on the go!
Whether you bring leftovers from the night before or throw together a quick salad with simple snacks, your body will be much happier. Same goes for your wallet. While I work from home most days, I find that switching up the scenery and working in cute coffee shops a couple times a week inspires my creativity and fuels some fresh ideas. So on these days, I bring snacks and lunch with me using the NEW Rubbermaid? fasten + go kits which make traveling with food so easy.
If you’re a health nut like me, you will love these new kits that are coming to Target on 12/27. Featuring an entr?e kit, soup kit or sandwich kit, they come in a few trendy colors with carry straps and bpa-free containers that easily snap together for compact transportation. You won’t have a bunch of containers of all difference sizes rolling around (sometimes spilling/leaking) in your purse or lunchbox.
Yes please. In a few minutes, you’ll have a healthy lunch that you can feel good about.
Start by making a big salad in the main entr?e container:
- Fill it up with your favorite leafy greens (spinach, kale, arugula, spring mix, sprouts)
- Add in your favorite veggies or fruits (bell pepper, celery, broccoli, tomato, apple, etc)
- Include 1 cup of cooked whole grains (quinoa, brown rice, millet, barley, buckwheat)
- Add a plant protein like beans, tempeh, nuts or 1/2 avocado if you need extra fuel
Make your own simple homemade dressing using one of the small containers. My go-to dressing for any salad has lemon juice, apple cider vinegar, dijon mustard and maple syrup! In the other small container, I added 2 tablespoons of hummus to go with my carrots and cucumber slices. For the last middle-sized container, I had to grab a handful of my favorite Mary’s Gone Herb crackers.
It’s the perfect lunch with a couple snacks to keep you feeling good and nourished, instead of resorting to fast food or take out.
Starting on 12/27/15 head to your local Target store to purchase the NEW Rubbermaid? fasten + go kits! Available in Entree, Sandwich, and Soup Kits!

What a delicious salad and dressing!! We have had a bag of buckwheat in the cupboard for months not knowing what to do with it. This will definitely be a regular for us. My little girl (2yrs old) love it as well – winning all round 🙂
