The easiest veggie-packed dinner ever! Ready in 30 minutes, alongside the most delectable vegan white queso dip.
2 bell peppers, sliced (any color)
1/2 head of cauliflower florets
2 portobello mushroom caps, sliced
1 small red onion, sliced
2 tablespoons avocado oil (or grapeseed oil)
1 tablespoon chili powder
2 teaspoons cumin
2 teaspoons paprika
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon red pepper flakes (optional)
fresh limes (optional)
Preheat oven to 425 degrees F. Line a sheet pan with parchment paper.
Chop the veggies. Add to a large bowl and toss with the oil and spices.
Transfer veggies to the sheet pan and spread out evenly.
Bake for 20-25 minutes.
Serve in corn tortillas with the white queso sauce!
