I wanted to start out the week by sharing a delectable Strawberry Coconut Swirl Shake that I made over the weekend. This sweet pink shake is lusciously creamy and swirly in the best ways. I have been a little burned out with smoothies lately so I changed it up. The result?
This beautiful swirly pink coconut dream! If you like thick milkshakes, this recipe is for you. It’s hard to think of a fruit that doesn’t taste good with coconut. But strawberries, they will always taste amazing when paired with coconut. I added chia seeds to healthify this shake (healthify is a word right? ha) and they add a nice touch.
On Friday night, I had a girl’s night in with my besties, which was very much needed! Then, Marty and I spent the day downtown on Saturday at Oak Street Beach to get a little sun – it was literally the most perfect day to be at the beach. After the beach, we walked around and came across a farmers market in the gold coast where I picked up these sweet strawberries and some donut peaches (yes!) which inspired this yummy shake. I posted them on instagram over the weekend. Donut peaches are too darn cute, I wanted to include them in this recipe but they weren’t ripe yet. I always have cans of coconut milk in the fridge just in case a new recipe calls for it – like this one! And chia seeds are a superfood staple as well. I talk more about my love for chia seeds here. Description
A delectably sweet and creamy vegan strawberry coconut milkshake with added chia seeds for superfood power.
Ingredients
Strawberry Layer
- 2 cups fresh strawberries (frozen fine too)
- 1 frozen, sliced banana
- 1 cup almond milk
- 1 teaspoon vanilla extract
- 1 tablespoon chia seeds
Coconut Layer
- 1 can light coconut milk
- 1 frozen, sliced banana
Instructions
- For strawberry layer: In a blender combine strawberries, banana, almond milk and vanilla. Blend until smooth. Add in chia seeds at the end, and pulse a few times just to get them mixed in. We don’t add chia seeds first because they will turn the shake into a jelly-like texture. Pour shake into 2 or 3 cups, filled halfway up for each. Refrigerate for the time being.
- Rinse out blender. Add canned coconut milk and the frozen banana and blend until smooth. Remove cups from refrigerator and slowly pour the coconut layer over the strawberry layer. Swoosh around with a spoon or straw to get the swirly effect.
- Sip slowly and enjoy!
I would consider this more of a treat because of it’s sweetness and thickness, but I wouldn’t be mad if you made this for breakfast either. This has way more nutritional value than any fast food milkshake, that’s for sure. Sometimes you just gotta indulge. It’s totally okay 🙂
