Sugar-Free Cinnamon Crunch Granola. Vegan and Gluten Free. Sweetened with stevia and cinnamon. Made with oats, coconut oil and nuts for crunch!
2 1/2 cups gluten free rolled oats
1 1/2 cups raw almonds
1 cup sunflower seeds
1/2 cup hemp seeds (or chia seeds)
4 teaspoons cinnamon
3/4 teaspoon sea salt
1/2 cup coconut oil, melted
2 teaspoons vanilla extract
20–30 drops of liquid stevia drops
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
In a large mixing bowl, combine the dry ingredients and mix.
Melt the coconut oil and pour over the dry ingredients, along with the vanilla and stevia drops.
Transfer mixture to the sheet pan and spread out with a spatula.
Bake for 15 minutes and mix, then bake another 12 minutes.
Remove from oven and let cool. Stir in the optional “extras” if you want!
Store in an airtight container. Enjoy!
Optional “Extras”: 1/2 cup shredded coconut, 1/2 cup dried fruit (cranberries, raisins, gogi berries, etc.), 1 cup freeze-dried fruit (strawberries, bananas, blueberries, etc.), 1/4 cup vegan chocolate chips (I like these sugar-free ones)
