Summer Swirl Superfood Pops

Ingredients

Pink Layer

  • 1 cup light coconut milk (or any plant milk)
  • 1 cup strawberries (fresh or frozen)
  • 1/2 tablespoon maple syrup
  • 1/2 teaspoon maca powder

Purple Layer

  • 1/2 cup light coconut milk (or any plant milk)
  • 3/4 cup blueberries (frozen produces better purple color)
  • 3 tablespoons chia seeds
  • 1/2 tablespoon maple syrup
  • shredded coconut, optional

Instructions

  1. In a blender, blend all ingredients for the pink layer until smooth. Pour the mixture into 8 popsicle molds. Set aside. Rinse the blender.
  2. Now blend all ingredients for the purple layer until smooth. Pour this mixture over the pink layer. Using a popsicle stick, swirl the purple layer a bit so it creates a swirly effect with the pink layer. Sprinkle a layer of shredded coconut over each popsicle. Insert the popsicle sticks.
  3. Freeze for 4-5 hours or until frozen.
  4. Enjoy!
