This recipe was almost going in my cookbook, but I decided to share it here instead!
It was originally in the Menstrual Phase Recipe section, so it’s perfect for that time of the month.
This Vegan Cashew Beet Snack Dip is:

- creamy
- luscious
- BEAUTIFUL
It’s absolute perfection and you probably have most of the ingredients on hand! I love serving it with veggies like jicama and cucumber, along with rice crackers and beet chips for crunch.
It’s also not considered hummus, haha. There are no chickpeas! It’s just a scrumptious snack dip, which is a nice change of pace from hummus, if you ask me. I’m not the biggest fan of beet hummus for some reason, but wow is this recipe simple to make.
How beautiful would it be to serve at a party?! Or for your weekly meal prep? Okay so all you do is steam the beets (or buy packaged beets – like the Love Beets brand). Then add the beets along with the other ingredients to a food processor and blend until smooth. Mmmm!!

Description
Tangy, creamy and lusciously beautiful Vegan Cashew Beet Snack Dip! Perfect for parties and weekly meal prep.
Ingredients
3 small beets, peeled and quartered (or buy packaged/already cooked)
3/4 cup cashews (soaked in hot water for 10 minutes)
1 clove garlic, minced
3 tablespoons water
2 tablespoons olive oil
2 tablespoons apple cider vinegar
1/2 teaspoon sea salt
1/2 teaspoon dijon mustard
Instructions
Wash, peel and steam the beets using a steamer basket in a pot on the stove. Steam cook for 10 minutes or until soft.
In a food processor, first add the cashews and blend until finely ground. Next add in the steamed beets and all remaining ingredients. Blend until smooth and creamy!
Serve with veggies and crackers. Enjoy!
Store leftovers in an airtight container for up to 3 days.
