    With Easter quickly approaching, I rounded up some of the best recipes from the blog that I thought would be fitting for your celebratory brunch or lunch!

    Sometimes it’s hard to pick and choose what you are going to make, so I hope this helps your planning efforts! Let’s get right into it 🙂


    1. Vegan Everything Bagels

    A gluten-free crowd-favorite! Made with almond flour, these are the easiest no-fuss, most satisfying bagels ever! Serve with Kite Hill cream cheese.

    For an egg-like taste and texture, jazzed up with anti-inflammatory spices like turmeric and super fresh, flavorful herbs like parsley. It’s a deliciously bright and inviting vegan option!

    4. Veggie Chickpea “Meatballs”

    For a heartier “meatball” side, made of zucchini, carrots, chickpeas and yummy herbs. These delightful little balls are one of my favorite meatless additions to any meal!

    5. Chickpea Pineapple Salad

    Offering a hint of summer, this fresh and fruity salad with protein-rich chickpeas is sure to brighten up your Easter day. Isn’t she beautiful?!

    6. Summer Glow Salad

    A simplified salad without the leafy greens! Just chopped up, super fresh, crunchy veggies and a citrus dressing. Summer in a bowl!

    7. California Chopped Kale Salad

    The main star of so many of our family parties! This popular salad shines and is bursting with unforgettable flavor. Juicy grapes, marinated kale, quinoa, corn… the list goes on. And the most heavenly dressing to pull it all together. Mmmhmm!

    8. Lemony Quinoa Brussels Sprouts Salad

    The most refreshing, light and lemon-y quinoa salad you ever did see! I love how this recipe comes together with roasted brussels sprouts and a tahini lemon dressing that is to die for.

    9. Easy Vegan Almond Butter Chewy Cookies

    The easiest cookies with minimal ingredients but incredible taste. I love how chewy and naturally sweet these cuties are. The chocolate chips are a must!

    Did someone say donuts?! How fun are these adorable cake donuts. You could decorate before, or have a decoration donut bar where guests decorate as they please! Is that not the cutest idea ever?!

    11. Vegan Reese’s Peanut Butter Eggs

    I saved the best for last… my copycat Reese’s peanut butter eggs! Watch out because these will go fast… they are highly addicting and are ready in 30 minutes. These will be a major hit!

I’ve been wanting to do this for a while as a fresh start with all the changes to my “brand” in the last year. It feels right to just use my name 😀 (fun fact: I haven’t taken my hubbys last name yet because of business paperwork that I’m too lazy to figure out 😅 name changes are complicated) 

@theglowingfridge started out of my love for the plant based lifestyle but so much has changed in the last 9 years and I’ve been itching to update. When my blood sugar is on a nasty rollercoaster, I’m not the best mama that I know I should be for my girl. I’m more irritable and short. So I prioritize protein, healthy fats and carbs at each meal. This helps me feel balanced and provides energy to play and chase after her all day! I need all the fuel I can get.

    I don’t get ready everyday… But when I do I f I don’t get ready everyday…

But when I do I feel better, duh! And more confident. More productive. Happier in general. Of course I have super lazy days but I try to get myself together because I’m more likely to leave the house, you know mamas? I hate when people ask “why do you get ready if you’re home all day”..
