The most refreshing and naturally sweet Watermelon Peach Popsicles!
Hydrating, creamy and frozen to perfection, you will surely love these dream pops. I’ve been wanting to do a watermelon ice cream or popsicle recipe for a long while. After many failed ice cream attempts, I gave up and switched to popsicles. This was the right move, and also the easier move too.
On a hot summer day, is there anything better than a juicy popsicle?
Watermelon is the epitome of healthy summer food too! It’s packed with vitamin A and vitamin C, making it a natural anti-inflammatory and powerful antioxidant, and also acts as a natural diuretic due to it’s high water content. I’ll take all the watermelon please. It truly never gets old!
Also, nothing beats a juicy, perfectly ripe peach. I just couldn’t pass them up in the store and I’m so glad I added a peachy touch to these pops. Ahh, can summer stay here forever?!
All you do is blend the watermelon, juicy peaches, coconut cream, vanilla extract, sea salt and optional maple syrup (for extra sweetness) in a high-speed blender. Then pour the mixture into the popsicle mold (I like this old-fashioned one) and let freeze for at least 4 hours. Voil?! I also like this silicone popsicle mold for easier removal! Don’t forget the popsicle sticks too!

Description
The dreamiest Watermelon Peach Popsicles. Dairy-free and vegan. Made with hydrating watermelon, juicy peaches and coconut cream for the yummiest summer popsicles!
Ingredients
2 cups cubed watermelon
2 peaches, pitted
1/2 cup coconut cream (use canned coconut cream or the coconut cream from the top of a refrigerated can of full-fat coconut milk)
2 tablespoons maple syrup or 20 drops of stevia (optional, for extra sweetness!)
1 teaspoon vanilla extract
pinch of sea salt
Instructions
Add all ingredients to a high speed blender.
Blend until smooth!
Pour into a popsicle mold and let freeze for 4 hours at least, or overnight.
Enjoy!

Is there something that can be substituted for the coconut cream? I cannot eat that stuff. It is such a bummer when I see amazing recipes, but coconut is used. 🙁

You could maybe try cashews! Sorry, I use coconut all the time because I absolutely love it. You could omit it all together and make just a fruit popsicle if you wanted to.
