Hello!!
Quickly popping in for another What I Ate Wednesday, before Terry and I take off to Mexico early tomorrow morning!!
Eek!
I still have so many errands to run and lots of packing to do… but we’re going to Puerto Vallerta and I could not be more excited!!!
Since my 28th birthday is on Friday and his 30th birthday is on Tuesday, we’re taking a mini birthday vacay and trading this Chicago gloom for sunny beach days… follow along on instagram and snapchat (@glowingfridge) to see our adventures! We plan to go whale watching, explore the downtown, eat all the good food and soak up all the sun 🙂
Hope you guys are having a great week, let’s get into my yummy plant based vegan eats. Also, so sorry these pictures aren’t the best quality.. it was super gloomy and I used my iphone.. but it’s just a real day of eats so I figured you wouldn’t mind!
BREAKFAST:
First things first! Water, water water, before anything else, as you guys probably know by now! I always make sure to drink 24 ounces (3 cups) of filtered water (sometimes with 1/2 lemon) every single morning. I use this mason jar all day every day because its huge and lets me measure out my water intake. Water helps to rehydrate the body after a long night?s rest when we get dehydrated and is so essential to wake up the body. It starts the day off on a healthy note, and is SO great for skin too!
Then I gotta have my coffee fix, with my fave non-dairy creamer ? the Silk Almond Vanilla Flavored Creamer (check out my superfood coffee elixir recipe too!).
Something chocolate-y was calling my name, so I decided on a version of my Post-Workout Chocolate Peanut Butter Smoothie, swirled with molasses (a good source of iron!) except I added in berries and swapped the peanut butter for almond butter, since that’s all I had. So yummy! I also made a batch of my no-bake peanut butter energy balls, and ate 2 of those. Love them!
SNACK:
A few hours later, I snacked on a fuji apple and drank the remaining half of my guava kombucha. Seriously obsessed with kombucha and all its goodness.
LUNCH:
Lunch was this kale and sweet potato glow bowl, with 1/2 avocado, crumbled tempeh, hemp hearts and a small handful of pepita seeds for crunch, drizzled with lemon tahini balsamic dressing (I mixed balsamic vinegar with tahini & lemon juice!). This bowl was so yummy and filling, definitely one of my favorite combos lately.
SNACK:
For some pre-workout fuel, I made sunflower seed butter and blueberry jam toast! You guys always ask about what bread I use, and I love the sprouted Ezekial bread.
DINNER:
Dinner was lots of steamed broccoli with the last of my tempeh (crumbled it) and lots of quinoa, even though it doesn’t look like it. Instead of cooking quinoa with plain water, I used low-sodium vegetable broth for extra flavor. This bowl was super plain and simple, but that’s all I had a taste for, so I loved it!

all of your food sounds SO delicious!! i seriously need to work on drinking more water – you’ve inspired me. and i recently became obsessed with kombucha too, but i haven’t tried the guava flavor yet! it’s on the list.
i made quinoa this week with coconut milk and turmeric and it was unbelievable with some spices. i’m going to post that on my blog tomorrow, hopefully 🙂

You will love Puerto Vallarta! If you see Grateful Ned and crew tell them I said hi (that’s my parents LOL). They stay in Portofino by the marina. I hope to get back there someday soon. Puerto Vallarta also has — aside from a gazillion restaurants — a wonderful market and great art. I hope you have a fabulous time and Happy Birthday!
