Hello my loves. Happy International Women’s Day and What I Ate Wednesday! I’m a little grumpy as I’m taking a break from coffee… ugh. The addiction is so real.
Hope your week is going fab. Let’s get into my plant based, caffeine-free eats.
HYDRATION:
Every single morning, water, water water, before anything else, as you guys already know!
I drink 24 ounces (3 cups) of filtered water, today with 1/2 lemon. I use this ginormous mason jar all day every day because no one cup is ever big enough?? Plus, I can measure out my water intake and try to drink 3 mason jars filled with water per day. Water helps to rehydrate the body after a long night?s rest when we get dehydrated and is so essential to wake up the body and start on the right track. Also, my skin looks so much smoother and stays clear!
Like I mentioned above, I’m taking a break from coffee… literally THE WORST.
This week, I’ve been feeling totally burnt out. Like no energy whatsoever, even though I sleep 7-8 hours. I’m not sad or depressed, just literally drained and little things like cleaning up the kitchen are exhausting. It’s super weird..? I eat plant based nourishing foods. I take B vitamins. I drink a ton of water and exercise 3-4 times per week, doing yoga when I feel necessary, so idk??? I’m tired of being tired all the time! So I’m figuring it out and coffee is first up on the list to go. Stay tuned!
Instead of coffee, I’ve been inspired to make golden milk turmeric latt?s by the lovely Alexis of hummusapien! I’ve seen them all over her instastories lately and figured it was the perfect replacement for coffee, since it’s warming and seriously the yummiest, most luxurious cup of liquid gold (as shown in the picture above!). Go make it now!!!!!
Here’s my go-to Golden Milk Turmeric Latt?:
1 1/4 cup almond milk
1/2 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
pinch of black pepper (to help absorb the curcumin in turmeric!)
1 teaspoon maple syrup
**In a small pot over the stove, heat and whisk all ingredients together until hot! You can also warm the almond milk in the microwave and then whisk in all the ingredients. It’s so luxurious and warming and I most definitely need to do a blog post on it.
BREAKFAST:
It was a everything-but-the-kitchen-sink kind of smoothie day, because I needed all the energy to make up for the lack of caffeine… 2 big handfuls of spinach, 2 ripe bananas, 1 cup frozen berries, 3 tablespoons hemp seeds, 1/2 teaspoon turmeric, 1/2 teaspoon spirulina, 1/2 teaspoon maca powder, 1 scoop Vega Protein and Greens and 1.5 cups water! Topped with cherry granola and cacao nibs. YUM.
SNACK:
While working, I snacked on the usual.. apple with Justin’s Almond Butter which is literally the best. And almond butter right out of the jar because it’s ALL MINE. No shame ha.
LUNCH:
Pretty much anything goes! Lunch was a sweet potato quinoa glow bowl with spicy pico de gallo, crumbled tempeh and 1/4 avocado. LOVE this combo.
SNACK:
I took a work break to make these No-Bake PB Energy Balls because they’re my fave and super easy to whip up. Plus, I was totally dragging with a headache and just wanted to eat something sweet. Roll in shredded coconut for extra sweetness! The only problem: I could eat the entire batch in one sitting if I let myself. I prob had 4 of these little bites this time tho.
DINNER:
After some light yoga and tons of water, I made another bowl. Are you surprised? Bowls are the best. This one had kale, quinoa, cauliflower, tempeh, the remaining avocado from lunch and raw probiotic kraut from Farmhouse Culture. Plus, this homemade tahini dressing, which I make every week now for salads and bowls!
I also had way too many vegan chocolate chips, a cup of peppermint tea and a rice crackers while watching Real Housewives…

Hi Shannon. Thank you for this latest post. I can’t wait to try out your recipes above.
As for your situation of still feeling tired despite having done the necessary, it seems that there are much “wet energy” (in Chinese ancient medical term ) inside body, causing the overall yin and yang energy, the metabolism and functionality of some important organs, such as liver, ovary, blood circulation, etc upside down, hence the exhaustion.
You may try the following food healing which is useful to flush out the extra “Wet energy” from body :
【Red bean + Barley soup :
.. can be consumed every week
.. consume after menstrual cycle completely clear】
Red bean .. 30g
Semen Coicis/ Coix Seed ..60g
( Can be found from Chinese traditional medicine store)
Water .. 2 liter
Ice sugar or natural sweetener
1.. Divide coix seed to half , 30g used for dry frying in sauce pan a while without any oil, till golden brown
2.. Soak red bean and the other 30g of coix seed in water for at least 6 hours or overnight.
3.. Cook the red bean + the dry fried coix seed + the raw coix seed in the water in a pot or rice cooker
4.. First cook on high fire till water boiled, then turn to slow fire cooking. Cover and cook about 1 hour. Stir once a while when it is about to flow out when boiling.
5.. Important : do not let it cook until thick consistency… because the purpose is to flush out wet energy from body.
So the done cooked consistency should resemble clear soup and not thick soup.
6.. Avoid tug in to cold drinks or food that are just out from the fridge. At least let the cold drinks or food to stay in room temperature for at least 2 hours before consumption.
7.. The amount of ingredients above can be adjusted if you prepare for more.
8.. Avoid consume too much coconut cream, coconut sugar.
9.. Avoid directly get the feet and head exposed under strong air cond.
10.. Avoid sleeping under air cond..
Another food healing is useful to maintain the health of ovary :
【Lotus root + Chinese red dates soup :
.. can be consumed every week
.. during and after menstrual cycle 】 .. single serving
Lotus root .. about 3 ~ 4 inch per usage
Chinese red dates .. choose the seedless type
Water
Brown sugar or Natural sweetener
1.. Wash lotus root and dates till clean.
2.. Slice lotus root. Roughly cut open the dates so that it release the nutrients better when cooked in water.
3.. Put ingredients in an container, pour water till cover the top of ingredients.
Put the container in a large pot, covered.
First cook on high fire till water boiled, then turn to slow fire cooking. Cook about 30 min.
4.. When it’s about done, add some brown sugar or natural sweetener to taste.
Cook for another 5 min.
5.. Serve when it’s warm. And do not put overnight.
The leftover Lotus root can be made into meal ingredients : D
