    What I Ate Wednesday

    Hi my lovelies! As per usual, its What I Ate Wednesday again!

    Plant based vegan style, with lots of chocolate-y goodness and a little red wine 😉 Hope you guys are having a great week!


    HYDRATION:

    Every single morning, water, water water, before anything else. Water is crucial in keeping my skin clear and smooth. I use this ginormous mason jar all day every day because no one cup is ever big enough?? Plus, I can measure out my water intake since I aim for 2-3 liters per day.

    Before breakfast though, its always 24 ounces (3 cups) of filtered water, today with 1/2 lemon and 1/4 teaspoon spirulina powder. Spirulina in small amounts is virtually tasteless, so there’s no nasty green taste and it gives me a little extra energy and detox power (P.S. a post is coming on friday!)

    I feel like a mermaid.

    What I Ate Wednesday

    BREAKFAST:

    There’s a new smoothie in town… and its made with a secret ingredient… frozen cauliflower.

    YESSS! Cauliflower. And no, you do not taste the cauliflower, but its literally the creamiest smoothie ever and the extra veggie power makes me so happy! After seeing smoothies made with cauliflower all over instagram, I knew it was time to try it out. Go make this ASAP. I promise, you will love it.

    2 big handfuls of spinach, 1 ripe banana, 1 cup frozen cauliflower, 2 tablespoons hemp seeds, 1/2 teaspoon maca, 1/4 cup shredded unsweetened coconut, 1 scoop Vega Protein and Greens, 1/2 cup filtered water + 1/2 cup almond milk! Top with more coconut and hemp. YUM. Bring on the veggies. 

    What I Ate Wednesday - Plant Based and Vegan. Coconut Cauliflower Smoothie

    SNACK: 

    Later on while typing away, I grazed on all kinds of things. A handful of cacao nibs for energy, an apple, a larabar (banana chocolate chip is my fave lately) and don’t be mad at me… a cup of coffee with Silk Almond Vanilla Creamer. Yep, I went back to coffee over the weekend.. oops.

    LUNCH: 

    Lunch was steamed broccoli and leftovers from my tofu ricotta lasagna I made on Sunday night. It rocks my world! With all the snow we’ve had the past couple days, I need lots of warming comfort food, plus it has tons of zucchini and spinach.

    What I Ate Wednesday. Plant Based and Healthy. Vegan Tofu Ricotta Lasagna

    SNACK:

    I sipped on a little kombucha throughout the afternoon! For some pre-workout fuel, I snacked on chocolate chia overnight oats – adapted from my PB Chia Overnight Oats – with cacao powder instead of peanut butter and topped with cacao nibs and coconut!

    DINNER:

    After I got home from the gym with Terry, I made a quick protein shake with vega protein and got to cooking since he was coming over for dinner (shared it on insta stories!). I made lentil veggie tacos, with whatever I had on hand, which happened to be 1 zucchini, 1 tomato, 1/4 red onion, 1/3 jalape?o, 2 cups kale, 2 cans of cooked lentils and a bunch of taco spices (chili powder, paprika, cayenne, cumin, sea salt, black pepper, garlic powder and red pepper flakes). He loves spicy food so I always up the spiciness level when he’s here. We topped with them lettuce and guac. I also snuck in a glass of red wine! 

    What I Ate Wednesday. Plant Based Vegan. Lentil Veggie Tacos.

    Finished out the night with my Calming Magnesium Beauty Sleep Tea!

      I’ve got to try the cauliflower smoothie trick! I’m currently au pairing for two seriously picky kids and the only time I can get them to eat anything healthy is if I blend it into a smoothie or a sauce. Will definitely be slipping some cauliflower into their after school smoothies now!

1. You can do hard things. 
2. Stay consistent. 
3. Don’t give up.
4. Stay consistent. Again.
5. People will quit, don’t take it personally.
6. TV is a time suck (I haven’t watched TV since I started 🙃)
7. This business isn’t for everyone (only the hustlers).
8. Girls are desperate for community and support.
9. Moms especially need support like this.
10. Making your own money is security.
11. Making your own money is powerful.
12. The trips are life changing.
13. You can multitask.
14. Your friends probably won’t support you. That’s okay.
15. You have to be a little bit delusional with your vision and belief. 
16. Go for it. Dream big.
17. Stay consistent.
18. Ask for help from your mentor.
19. Do the uncomfortable things. Keep doing them.
20. Remember why you started 🙏🏼

I starts out my morning with a bunch of supplements to eliminate parasites and bacteria and repair my gut while supporting my liver and gallbladder. Next I make a protein smoothie with vanilla whey protein powder and a custom supplement to support my deficiencies. And lastly my creamy dandy blend latte because I’m not drinking coffee right now.

This is what works for me right now! I also have gf toast usually from @awgbakery. I’ve had to eliminate so many things but it’s all for good reason, to reduce all the inflammation. I’m working with @lifelabwellnessco if you would like your own custom plan and testing 🙏🏼 should I share more videos like this?
