Hiii and happy What I Ate Wednesday!
Hope you’re having the best week! I sure am, especially after yesterday’s Unicorn Toast.
Let’s get into my full day of plant based eats.
HYDRATION:
You guys know how crazy I am about water first thing in the morning. Every single morning, before anything else… I say it every week! Water is imperative for keeping my skin clear and smooth. I use this ginormous mason jar all day every day because I can measure out how much I’m drinking (I aim for 2-3 liters per day) and I’m not wasting plastic water bottles.
Sometimes it’s plain water, sometimes it’s lemon water, sometimes its Mermaid Lemonade, (which so many of you have been loving!) but today it was plain filtered water using this filter which is a zillion times better than Brita, but any filtered water is better than tap, so do what you can.
BREAKFAST:
Breakfast was a ‘Blue Majik’ Smoothie Bowl with so much goodness! Recipe below 🙂 One new thing I’ve been adding to my daily morning routine is one tablespoon of blackstrap molasses with breakfast. Molasses is a great source of iron, calcium, magnesium and vitamin B6. I’m always trying to incorporate more iron into my days, being a vegan and all!
Blue Majik Smoothie Bowl:
1 ripe, frozen banana (read my How To Freeze Bananas post!)
1.5 cups frozen cauliflower florets
3/4 cup frozen blueberries
1 scoop Vega Protein and Greens
1/2 teaspoon maca powder
1 capsule of E3Live Blue Majik (could also use spirulina)
1/2 cup almond coconut milk blend + 1 cup filtered water
** Top with bananas (used these super cute shape cut-outs), cacao nibs and a drizzle of dreamy cashew butter
SNACK:
A cup of coffee with a splash of fave Silk Almond Vanilla Creamer (used my new frother!). Plus a couple no-bake energy balls, with Vega Protein and Greens (which you guys know I’m obsessed with) instead of powdered peanut butter. I’ve also been loving my lemon coconut energy balls!
LUNCH:
Lunch was a easy leafy green salad with quinoa, celery, apple, slices of tempeh, red cabbage shreds, pepita seeds and the Simple Girl Citrus Ginger Dressing (oil-free and so good!).
SNACK:
Avocado toast on ezekial bread with crushed red pepper flakes and kale sprouts… carb cravings ha.
DINNER:
I have Spicy Black Bean Burgers coming to the blog soon, but I tried out these Vegan Broccoli Cheeze Chickpea Burgers from Hummusapien and loved them! Terry ate 3 burgers in one sitting…. yep. LOL. Plus a side of quinoa and steamed asparagus. It’s asparagus season, yay!
I might have snuck a few pieces of this crunchy mint dark chocolate bar that I’ve been buying lately, from Target. Mmmm.
