Good morning loves! I have a very exciting announcement!!
Tonight is the Phenom Foundation’s 1st Annual Mutt Strut in Chicago (Bucktown), and I’ll be walking an adoptable rescue dog down the runway with other influencers and models. Isn’t that the cutest idea ever?!! Eek!! If you are in Chicago, I would LOVE to see you there. Tickets are $35 (includes drinks and light bites) and proceeds go towards animal relief efforts in Puerto Rico, following the hurricane (buy tickets here).
I’m SO excited, a little nervous and hope I’m not sobbing by the end when I can’t take home all the precious pups that need a home… but it’s for a great cause and I’ll do anything for the animals!

HYDRATION:
My morning hydration was 32 ounces of filtered water with liquid iodine – I swear by this addition to my routine, mostly for PMS issues! Pair it with 2-3 brazil nuts too. Read more about that here!
I drink my water out of this huge 32 ounce mason jar, because I can measure out how much I’m drinking (I aim for 2-3 liters per day) and I’m not wasting plastic water bottles.
BREAKFAST:
Breakfast was the yummiest pumpkin & coconut yogurt jar! Ate this along with my supplements.
Pumpkin & Coconut Yogurt Jar
1 cup plain coconut yogurt (I like the unsweetened from So Delicious)
1/2 cup pur?ed pumpkin
2 tablespoons chia seeds
1 tablespoon ground flax
1/2 teaspoon cinnamon
1/4 cup almond milk
1/2 chopped apple
lots of sunflower seed butter
topped with Purely Elizabeth granola
SNACK:
I had a facial appointment (at Mariola’s Organic Spa) and wanted a snack before since my breakfast was pretty early, so I snacked on another apple and a piece of toast with dairy-free Kite Hill Cream Cheese and red pepper flakes. Yesss. Also, the facial was amazing and SO relaxing, I highly recommend!
LUNCH:
Looks very styled – I know! It is a deliciously styled food pic for Nutiva (Cool Cucumber Ranch recipe will be on my instagram) but basically its a big plate of kale, roasted broccoli & cauliflower, and roasted butternut squash with pepita seeds! It really hit the spot 🙂
DINNER:
Dinner was similar to lunch with the roasted veggies and squash, but also with a yummy veggie burger (using this recipe, which I make often!).
DESSERT:
Coconut Date Rolls dipped in Sunflower Seed Butter (amazing combo) and a handful of walnuts. Also, a nightly cup of my Calming Magnesium Beauty Sleep Tea before bed!
