Good morning loves! It’s What I Ate Wednesday today 🙂 I am also sharing a little restaurant adventure Marty and I had this past weekend at Karyn’s on Green in Chicago. It’s one of my favorite vegan restaurants around here!
I always start out my morning with a huge mason jar filled with warm water and fresh lemon juice from 1/2 of a lemon to detoxify and wake up my digestive system. Then I have a cup of coffee with almond milk and coconut sugar and then, ussally I make some variation of a smoothie or juice. Just like this pink smoothie which had 2 bananas, 1/3 pack of frozen PitayaPlus packs, 2 big handfuls fresh strawberries, almond milk and ice, then layered with granola, raisins and dried apricots. Yumm.
I have lots of recipes to experiment with the next few days so I whipped up a big batch of my favorite Spring Weekend Power Salad to last me through the rest of the week. That way I don’t have to make a salad everyday for lunch. It’s hearty, super yummy, crunchy and fills me up with nutrient-dense ingredients. Also I keep the homemade tahini dressing separate so it doesn’t get soggy in the fridge. I’ve been loving coconut water and found this Parrot Coconut Water at World Market while I was picking up my new wooden spoon (check out my instagram). This one was a little too sweet for me, I am not used to sugary drinks so I only had a few sips and gave it to Marty. He is the sugar king. It was tasty though! And the can was too cute to pass up!
In the afternoon, Marty picked me up a Matcha soy iced latte! I am in love with Matcha! Find out more about my love for Matcha here.
Later in the day I made this little bowl of goodness! It had one apple, one peach, vanilla granola and some almond milk. I’m not sure what to call it, but it was such a yummy snack. Fruit and Granola Goodness Bowl? Haha. Also I was doing lots of taste testing for upcoming recipes which was kind of my dinner I guess? Stay tuned!
I don’t know if its Marty or most guys in general but if I ask him to take a picture he gets that bored face like “Really… another picture…” Not that he gets annoyed at all, he is a trooper and will happily take a picture for me but he never thinks to take pictures. Probably because he is usually that guy people take pictures of. If you know Marty, you know he is a goofball and that pretty much sums it up. The Party Marty I know isn’t showing through in this picture but he does look handsome! Here we are at Karyn’s on Green. I have tried both locations in Chicago now, both are equally delicious! This is the Halsted location with a mini store/to go restaurant connected to the actual restaurant, it was adorable! The store had all kinds of yummy vegan foods. I will have to go back sometime because I didn’t get a chance to look at everything.
We started with this assorted cheese plate. I thought they would be cheese slices ( I have never tried vegan cheese before) so I was kinda bummed when it was a hummus consistency but they tasted amazing! There was cheddar, pesto, roasted red pepper and the last one was parmesan I think? There were also tiny dried blueberries and cranberries along with crushed almonds and garlic. YUM!
I ordered the Pad Thai which had coconut noodles, peas and carrots mixed in with a coconut curry sauce! I loved this but next time I would try something else. It wasn’t life changing if you know what I mean. What a beautiful presentation though!
Marty ordered the Enchilada which was a special that night. He loved it I think, it was gone in maybe 3 seconds ha. Inside was soy chorizo (an amazing taco replacement! I buy soy chorizo at Jewel) and veggies with spicy guacamole and beet salad. I love that he is open-minded and tries these vegan restaurants with me. Lucky girl!
That’s it! We don’t dine out that often because I am constantly making food nowadays (which I love)! But once in a while it’s nice to let someone else do the cooking right?! I recommend Karyn’s on Green if you live in Chicago! The atmosphere is serene and romantic, the service was excellent and the food is always so fresh and delicious!
