Hello!! Welcome back to another What I Ate Wednesday!
Hope you guys are having a great week!
BREAKFAST:
First things first is always lemon water, before anything else! I always make sure to drink 24 ounces (3 cups) of filtered water with 1/2 lemon every morning. I use this mason jar all day every day because its huge and lets me measure. Water helps to rehydrate the body after a long night?s rest when we get dehydrated. It starts the day off on a healthy note, and is SO great for our skin too.
Then I had a cup of coffee (only one this morning!) with my fave non-dairy creamer ? the Silk Almond Vanilla Flavored Creamer (check out my superfood coffee elixir recipe too!). After about an hour of work, I made a Daily Harvest Chocolate + Blueberry Vitality Smoothie, except I added in extra spinach, berries and banana! Topped it with cacao nibs. Love the Daily Harvest smoothies. I also snacked on a blueberry banana power muffin. Lots of bluebs and nanners…

SNACK:
Fuji apple drizzled with cinnamon (the best!) with a spoonful of runny almond butter.
LUNCH:
Lunch was a not-as-pretty version of my Roasted Sweet Potato Mash Tostadas! Except instead of white beans I used crumbled plain tempeh. Topped them with romaine, avocado and spicy green sauce from Trader Joe’s instead of my Spicy Magic Green Sauce (which I definitely prefer!). YUM.
SNACK:
Snacked on a Chocolate Chip Cookie Dough Larabar.. couldn’t resist!
DINNER:
Rotini pasta with arrabbiata sauce and nutritional yeast, plus a bunch of steamed broccoli!

Hi Lexi! Thanks, you’re the sweetest! I like doing them and so glad you love reading them 🙂 I will do more Glow Down posts but when I did the survey, a lot of readers said they prefer recipes over those types of posts… so I haven’t done one in a while but I’m happy to bring them back!
