Hello hello!
Since it’s been a while, I wanted to share What I’ve Been Eating Lately!
Some meals are from our recent vacation and some are just random meals from here at home but all are yummy and vegan! We arrived back home this week from a mini vacay to St. Pete in Florida and while the weather did not cooperate (it was freezing and windy, except for one hot day, thankfully!), we tried to make the most of it. By that I mean sleeping 10-12 hours per night, laughing more than ever and going with the flow by not making any plans throughout the entire trip… not even a dinner reservation!
And ya know what? It ended up being our most relaxing and easy going vacay yet, so no complaints over here 🙂 P.S. >> all of these meals are random and in no particular order, so let’s get to it!
So many plant powered bowls! This is one of my favorite combos: roasted broccoli and carrots, steamed kale, steamed chickpeas and Mediterranean hummus from Trader Joes. Heaven!
This here is my latest breakfast obsession and one that I’ve already shared on the blog! My Healthy Chocolate Breakfast Cup! Tastes like a chocolate lovers dream, but is packed with protein, fiber and healthy fats to keep you balanced all morning 🙂
This was last nights delish dinner. A spicy veggie stir fry over thin rice noodles, topped with herbs and microgreens! I adapted this from a stir fry recipe in my Hormone Meal Plan but there’s broccoli, carrot, edamame and zucchini in there with a little bit of this uh-mazing thai almond sauce mixed with gluten free tamari, water and sriracha. YUMM.
A to-die-for Daily Harvest Bowl!! This was the Cauliflower Rice and Pesto flavor which I HIGHLY recommend – it’s my absolute favorite and I’m stocking up on them. Since I have a large appetite, I added roasted brussels sprouts which was an excellent dinner choice 🙂 Daily Harvest is perfect for QUICK meals. Tried something new here and I liked it! Sprouted grain toast with mashed avocado, plain raw tempeh (sliced thin), microgreens and red pepper flakes with lemon. Wow! Definitely the easiest and quickest lunch with healthy fats and plant protein.
Black bean veggie tacos, as per usual! These are also adapted from my Hormone Meal Plan. This time with my Spicy Magic Green Sauce plus cilantro, greens and easy cabbage slaw (4 cups cabbage + 1/4 cup apple cider vinegar + 1 tablespoon maple syrup + a few hefty pinches of salt. Mix and refrigerate a couple hours until tangy!)
What I Was Drinking! Wine in a cup, on the beach, while Terry was pretending to nap I think?! This was a cloudy and cooler day, but that didn’t stop us from hitting the beach and freezing our bums off.
Fros? all day!!! This was the greatest drink ever created and I have no idea how they made it but I know it had lots of lemon and possibly strawberries?!! Will definitely try recreating it this summer. If you guys have any good fros? recipes, do let me know!!

I’m no stranger to vegan protein bars and feel like I’ve literally tried them all… but this Salted Caramel bar from 22 Days Nutrition is next level you guys. I’ve already bought like 10 boxes and while they only come with 4 bars in a box, I usually score them on sale at Target using the Cartwheel app (life-changing if you shop at Target a lot like me). They only have 4 grams of sugar with 15 grams plant protein and 9 grams of fiber!!!
Plus, Beyonce loves 22 Days Nutrition, so there’s that.
NEW must-have Trader Joe’s find >> the Carrot Ginger Miso Salad Dressing… OH MY YUM!!! Have you guys tried it?! The ingredients are perfection and it tastes so darn good on everything (not just salads) from roasted veggie quinoa bowls to salads to tofu veggie bowls like this. If I’ve learned anything while being vegan, its that a good sauce is KEY. So when you don’t have time to make one of my yummy sauces, I recommend this amazing Trader Joe’s sauce! Also in this bowl: tofu fried in coconut oil and tamari with steamed kale, asparagus, carrot and bell pepper, topped with the sauce that I just raved about.
And last but not least, another bowl. Are you sick of bowls or do you love them as much as I do?!! This bowl was also topped with the Carrot Ginger Miso Dressing from above 🙂 with roasted broccoli, cauliflower, carrot and zucchini over steamed kale. I think there was some tempeh under there too.
