I’m antsy to share this one!! Since so many of you loved my Sheet Pan Veggie Bake Dinner recipe, it was time to create another. One with a different taste for a different day of the week! When all your food starts to taste the same, it’s time to switch things up haha. We’ve all been there.
Especially if you are plant-based or vegan. The most important part of the lifestyle is variety of foods, to make sure you are getting good ratios of different vitamins, minerals and phytonutrients. Branching out and trying new recipes is essential.
Aside from Terry, my one true love is mexican food. I can always count on it to be vegan and veggie-filled, and just it’s so dang good. I never get sick of it! We are getting married in Mexico after all. I just truly appreciate the culture and cuisine.
This recipe uses bell peppers, cauliflower, onion, portobello mushrooms and delicious spices. Chop, mix with the spices and bake! While they’re in the oven cooking away, make the drool-worthy white queso sauce and your day will have been made.Print
Sheet Pan Fajitas with White Queso (Vegan)

The easiest veggie-packed dinner ever! Ready in 30 minutes, alongside the most delectable vegan white queso dip.
2 bell peppers, sliced (any color)
1/2 head of cauliflower florets
2 portobello mushroom caps, sliced
1 small red onion, sliced
2 tablespoons avocado oil (or grapeseed oil)
1 tablespoon chili powder
2 teaspoons cumin
2 teaspoons paprika
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon red pepper flakes (optional)
fresh limes (optional)
Preheat oven to 425 degrees F. Line a sheet pan with parchment paper.
Chop the veggies. Add to a large bowl and toss with the oil and spices.
Transfer veggies to the sheet pan and spread out evenly.
Bake for 20-25 minutes.
Serve in corn tortillas with the white queso sauce!

I made this recipe tonight!! It was so delicious. I didn’t have any tortillas, so I used brown rice and kale as a base. Added hot sauce and tomato on top! Absolutely delicious! I highly recommend making this. Takes less than 30 minutes and tastes amazing:)
