Good morning loves!
Here’s Taz (always closing his eyes for pictures, LOL!) and Kirby with the pumpkins we grew 🙂 aren’t they all the cutest though?!
Hope you are having the best week so far, and are sort of into this fall-like weather?! I’m into it!
Taz and I are getting settled into our temporary crib for the next couple months. Since my lease is up, I moved in with Terry and his fam this past weekend, and will be staying with them until some renovations on the house get finished! It’s much easier to re-do the floors and master bath without all our furniture and things in the house, so I can’t wait to share more house stuff soon but we’re hoping to be moved in by Thanksgiving, if all goes well! SO EXCITED!
I’m just happy I get to see Terry’s face everyday 🙂
HYDRATION:
My morning hydration was 32 ounces lemon water with liquid iodine – I swear by this addition to my routine you guys, mostly for PMS issues that I used to suffer from (breast tenderness and cramps) but this past month was the best month I’ve ever had (period wise). I know this is super weird to talk about but my boobs were not sore AT ALL this month, which is an absolute miracle for me and I owe it all to being consistent with iodine in my daily water intake, paired with 2-3 brazil nuts to keep my thyroid in check. Read more about that here! Nature truly is magical!
I drink my water out of this huge 32 ounce mason jar, because I can measure out how much I’m drinking (I aim for 2-3 liters per day) and I’m not wasting plastic water bottles.
BREAKFAST:
Breakfast really was the yummiest! A protein shake mixed with water and this Vega protein powder and a cup of coffee, which I started drinking again… I can’t help myself. It’s so good – UGH!
Then I made Cinnamon Oatmeal Protein Cups (recipe for muffins below!), topped with hemp seeds and peanut butter! So yum. Ate these along with my supplements too.
LUNCH:
Lunch was a bowl of massaged kale and mashed avocado salad, with a Spicy Black Bean Burger – my actual fave lunch of all time.
SNACKS:
Two snacks on this day, both very chocolatey! First I had a couple of these Flourless Fudgy Brownies… which are life-changing. I’ll share the recipe below and probably in a separate blog post too, they’re that good!
Flourless Fudgy Brownies
Ingredients:
1/2 cup mashed banana (about 2 bananas)
1/2 cup mashed sweet potato (about 1/2 sweet potato)
1/2 cup peanut butter (or any nut butter, even tahini works!)
1 tablespoon maple syrup
1 scoop Vega protein and greens powder (I used vanilla, but chocolate would be even better!)
1/4 cup cacao powder
pinch of sea salt
1/3 cup vegan chocolate chips (I used Trader Joe’s semi-sweet)
Preheat oven to 350 degrees. Line or grease a loaf pan or a mini muffin pan. In a large bowl, mix the banana, sweet potato, peanut butter and maple syrup together. Next, stir in the protein powder, cacao powder, sea salt and chocolate chips. Mix until well combined. Transfer into loaf pan and spread out evenly. Bake for 20 minutes! Let cool and refrigerate for 1-2 hours. I store them in refrigerator to keep them extra fudgy!

Later on for a pre-workout snack, I had a Vega Protein + Snack Bar in Chocolate Caramel… tasted like a snickers!
DINNER:
Dinner was simple and kinda similar to lunch… I was being lazy but it was still so yummy and I never get sick of my Spicy Black Bean Burgers, plus hot sauce! Alongside was a spinach and kale salad with cucumber, tomato and watermelon, drizzled with tahini dressing and sunflower seeds. And lots more water!
DESSERT:
A handful of vegan dark chocolate chips 🙂
And my nightly cup of Calming Magnesium Beauty Sleep Tea before bed!

I started drinking coffee again too! I was off for two months and didn’t see a change. Except now I have it with food or after breakfast instead of on an empty stomach. Did you see a difference being off?

I really want to try both those recipes too, they sound amazing :o!
Not this week but last I made some type of weird loaf with squash, it didn't turn out… right? But my family really enjoyed it so that's all that matters ;D
