Hi loves! It’s been a few weeks but we’re back with another What I Ate Wednesday!
This day involved not one, but two smoothies (!), sugar free chocolate and plenty of greens. It’s kind of all over the place, but was just one of those days. Hope you enjoy!
I started off the day with my usual 24 ounces of lemon water, plus a daily probiotic. Then my beloved sugar free ‘elevated coconut coffee’ that is so creamy and dreamy, you won’t believe it is in fact sugar free!
Then I waited about an hour and made this purple kale smoothie pictured below! This one had kale, frozen banana, frozen berries, cacao nibs, 365 acacia fiber powder (it’s flavorless! sometimes I prefer fiber powder over chia seeds), ground flaxseed, vega protein and greens powder, plus a mix of coconut milk and filtered water, topped with Kitch Fix vanilla berry granola, that is to die for. YUMM.
Lunch was my new baked chickpea falafels, with watercress and roasted butternut squash. I dressed the greens with a balsamic dressing too. Have you tried my falafels yet?! They couldn’t be easier 🙂
My energy was low in the afternoon, so I made a green smoothie which I don’t normally do so late in the day, but this recipe is the most refreshing spa-like experience. I call it my ‘Hydrating Spa Smoothie’ and I can bet you’ve never tasted anything quite like it. Once you try it, you’ll start craving it time and time again. I plan to share a full blog post recipe about it, but you blend kale, cucumber, celery, a medjool date, fresh mint, vegan protein powder, coconut milk/almond milk and water. Heaven in a glass! This smoothie is pictured above, the first picture in this post.
Dinner was sort of lazy and effortless, using leftovers from the night before. It tasted amazing though! Steamed kale, raw crumbled tempeh, grilled broccoli, asparagus and carrot, and all the avocado. Grilled veggies are so underrated!
And lastly, I couldn’t resist a piece of ChocZero sugar free dark chocolate. My non-guilty guilty pleasure! Also, they have since updated their packaging, but the chocolate remains the same!
