Happy spring! Yessssss.
Doesn’t quite feel like spring yet here in Chicago, but I’ll happily take it.
This Creamy Kale Coconut Smoothie feels a lot like spring though and reminds me of last March when I posted my Bikini Ready Green Detox Smoothie. At that time, I was preparing for a getaway to Cancun and drank that smoothie everyday for a week, which made me feel amazing.
While I’m not going anywhere tropical this year… (insert sad face) I’m totally feeling green smoothies again. It’s just that time of year when I start craving more salads and raw meals instead of comforting meals. Ya know what I mean?! So this green monster goodness is totally vibrant, packed with beauty minerals and has to be the creamiest smoothie EVER (from the avocado).
I used to be weirded out by smoothies with avocado but you haven’t lived until you’ve tried it. Avocado transforms the texture and is perfect in the morning for extra brain boosting power. Get ready to feel totally balanced with consistent energy throughout the day after drinking this!
PLUS, the kiwi and coconut bring all the tropical vibes. And don’t worry, I added plenty of superfoods (maca and matcha) for extra power.
Here’s what you will need:
- Kale
- Bananas (ripe and spoty!)
- Kiwi
- Avocado
- Flaked Coconut
- Maca and Matcha powder (optional)
- Almond Milk/Water
The Outline of Benefits:
You can use any kind of kale for this recipe but I used about 3 leaves (de-stemmed) of curly kale which comes out to about 3 cups. Did you know that 1 cup of kale has 3 grams of protein?! So this Creamy Kale Coconut Smoothie is packed with 9 grams of plant protein, just from the greens! Kale packs in fiber, folate, vitamins A, C, and K, omega’s and literally tons of beauty minerals.
Bananas are necessary for sweetness, mainly, but also add fiber and good carbs along with potassium and B6. Kiwi’s are loaded with vitamin C (which is essential for iron absorption from the kale!) and the flaked coconut provides that perfect tropical taste. The nutrient-dense avocado has healthy fats for brain power and the fiber will keep you feeling leveled and balanced, amongst the long list of vitamins and minerals.
Maca is an energizing adaptogen that not only regulates hormones (and adapts to your body’s needs) but increases fertility/libido, endurance and strength. Creamy Kale Coconut Smoothie
Ingredients
- 3 cups curly kale (about 3 leaves, de-stemmed)
- 2 bananas (ripe & spotty!)
- 1/2 avocado
- 1/2 kiwi
- 1–2 tablespoons unsweetened flaked coconut
- 1/2 teaspoon raw maca powder
- 1/2 teaspoon matcha powder
- 1/2 cup unsweetened vanilla almond milk
- 1/2 cup water (or more for desired consistency)
- ice (optional)
Instructions
- Add all ingredients to a high speed blender and blend until smooth.
- Enjoy!
Notes
- Can use any type of kale.
- Can sub any type of non-dairy milk for almond milk.

YUM! I’ve never thought about adding coconut to my smoothie! I’ve recently been on a coconut kick so I will have to give this a try 🙂 Especially now that it’s finally Spring (since sipping a smoothie during winter seems a bit crazy haha)
