    Tempeh Crunch Wrap - Vegan, Healthy and Delicious - from The Glowing Fridge

     

    Hi lovelies! A few of my friends have been asking more about the vegan lifestyle and what it entails which makes me so so happy! I love hearing their thoughts and sharing some of my experiences with them. Yesterday, one of my besties even said she would try out the vegan diet! So she stopped by to chat about it and I wrote out a few lists of my favorite vegan staples, recipes and where to buy them!  That night, she also tried this recipe, my Tempeh Crunch Wrap. She loved it and was surprised at how easy it was to prepare tempeh. She had never heard of it before. Neither did I until I went vegan! Tempeh is a mixture of fermented soybeans, millet, barley and sometimes rice. Fermented soybeans? Sounds gross, I know. But it’s really not, you have to try it! You will be surprised, tempeh is a staple in my house now!

    I love it over a salad, in a wrap like this recipe, or even on it’s own. You can think of tempeh as a crispy chicken replacement. Sort of like a blank slate, meaning it can be marinated in anything and will take the flavor of the marinade. And it doesn’t have to be marinated long at all, 5-10 minutes, thats it. It also doesn’t take long to cook either. I love tempeh because it’s simple and delicious. Customize this wrap to your liking with any veggies, toppings or condiments of your choice.     Remove tempeh from package.

    Cut it up into slices.

    Pour your marinade over the tempeh in a bowl.

    Let sit for 5-10 minutes, cook it and assemble your wrap!

    Description

    Vegan-friendly wrap


    Ingredients

    Scale
    • 1 8oz. block of Tempeh (I bought it from Trader Joe’s)
    • 2 tbsp. soy sauce (I used gluten-free)
    • 1/3 tsp. Sriracha (optional)
    • 1/4 tsp. garlic powder
    • 1/4 tsp. turmeric
    • 1/3 tsp. ground ginger (or minced fresh if you prefer)
    • Dash of red chili flakes (optional)
    • Couple dashes of black pepper
    • 1/2 lime squeezed
    • 1 tbsp. olive oil
    • Cucumber slices (2 per wrap)
    • Red Pepper slices (2 per wrap)
    • Red Onion slices (2 per wrap)
    • Baby Spinach (handful per wrap)
    • 4 tortillas (I used the Ezekial Sprouted Grain Tortillas)
    • Veganaise (or a condiment of your choice)

    Instructions

    1. Cut the tempeh block into logs and place in medium-sized bowl.
    2. In a separate small mixing bowl, add soy sauce, sriracha, garlic powder, turmeric, ground ginger, red chili flakes, black pepper, and lime juice
    3. Mix sauce with whisk or fork thoroughly and pour over tempeh logs until fully coated. I used my hands to get mixture on all sides of logs.
    4. Heat a pan on medium-high heat with olive oil until hot. Pour in tempeh logs with the remaining sauce in the bowl.
    5. Sauté each side of tempeh log for 2-3 minutes until all sides are browned. While the tempeh is cooking, cut up veggies
    6. Heat tortilla in microwave or oven until warm
    7. Add tempeh, spinach, cucumber, red pepper, and red onion to tortilla
    8. Add veganaise (vegan mayo) or any additional toppings and condiments of your choice
    9. Enjoy!

    Happy Monday! I used to hate Mondays but now that I am able to enjoy what I do (blogging that is), I can’t wait for them. Sound crazy? I never thought I would say that. My life before the blogging world consisted of jobs that were not meant for me. I have to laugh about it now. I realize I am new to blogging.. but at this moment it feels right. Sharing my love for a vegan lifestyle is empowering and I have never been in this happy place before. I am sure everyone in their life has had a couple jobs that they just dreaded going to! It’s the worst when you wake up and try to think of reasons to call in sick (guilty.. very guilty). I remember feeling bogged down, my mind was cloudy, my body moved slow, and there wasn’t much to be excited about at all.  Your life does not have to be like that! I can’t help but link those feelings to my diet as well. I was not a vegan after graduating college. I was what they call “healthy” meaning I rarely ate fast food, or red meat. I incorporated many fruits, veggies and lean proteins (I don’t like to think about it now!) but after what I know now, that was not a healthy diet.

    A plant-based lifestyle was never taught in my college classes, I wish it was! I studied Health and Fitness at Purdue. Back then, I had no idea what I wanted to be, all I knew was I loved being healthy and staying in shape so I chose a specific major to coincide. I just went with the flow and figured I would find the perfect career after graduation. Well, that did not happen. Reality check. For reals… I can’t stress enough to those in high school and college that finding your ultimate passion is the most important thing you will do (besides taking care of your body). Job satisfaction makes all the difference in your health and well-being. Pursuing a career in a field that you want to be associated with and learn about every single day can take loads of stress off of yourself.

    So do some research, take a class you have always wanted to take, but never thought you were “supposed” to or it might “look bad”. That class could make all the difference in your future. Follow your own path and you will be rewarded because only you can decide your happiness. Listen to your heart no matter where it takes you. It might take a while, but that is quite alright. It took me over 3 years to figure out what I truly wanted to pursue. I have accepted those dreadful years of hating all my jobs because it led me here. Now I have come full circle and can apply my learned health knowledge to this blog! I love everything about blogging. The writing, the photography, the design, the recipe-making and most importantly the new connections I make every day with my readers and other bloggers. This career is everything I love all in one and while it can take years for your blog to possibly become successful, I know 

    Let’s move on to this sizzlin’ green juice recipe. On Saturday morning I whipped up a brand new juice which I named the “Green Sizzle Goddess Juice”. Its loaded with cleansing, alkalizing veggies/fruit like kale, celery, cucumber, carrot and apple. I felt amazing after I sipped on this juice! If you need an energy and clarity boost, this juice is for you. Its called “Sizzle” because I added some jalape?o which is totally optional. It adds a nice kick though, even if you add the tiniest piece. You could omit the jalape?o altogether or replace with a dash of cayenne pepper. I added lime instead of my usual lemon to add a different flavor and I was very pleased! I love to make my juices in the blender in order to keep all the nutrients from the skin but you could also juice this recipe for a smoother juice.

    Description

    Refreshing & satisfying Green Juice with a kick!


    Ingredients

    Scale
    • 3 large kale leaves, stems removed and torn into pieces
    • 2 celery stalks, chopped
    • 2 carrot sticks, chopped
    • 1 large naval orange, peel removed and cut into chunks
    • 1 fuji apple, chopped
    • 1 lime, peel removed and cut into chunks
    • 1.5 inch piece of ginger
    • 1/4 piece of a jalapeño (OPTIONAL) or add a tiny slice, adjust to your taste
    • 2 cups water
    • 2 handfuls ice

    Instructions

    1. Add all ingredients into blender and blend until it becomes a juice-like consistency. You can always add more or less water depending on your preference. Enjoy!

    Notes

    • A high-speed blender works best. If you don’t have that, its fine! You may just need to add more water in your blender. Could also use a juicer instead of blender but I like to include all the fiber 🙂

    Hi lovelies! Have you heard of the phrase “Don’t go shopping when you are hungry”?! Well I did just that today! But I think it is a good thing when you are vegan because you do make especially healthy choices, most of the time. I stocked up on mostly fruits and vegetables and boy does my kitchen look beautiful! I love when I am fully stocked up because it allows me to be more creative. I am able to see everything on the counter and one piece of fruit catches my eye and then I think, what can I mix this with? And then voila! A new recipe is born. After a few trial runs of course, but it is a completely organic process. Usually, this is how I come up with many of my recipes. The smoothie recipe I have today is creamy and refreshing. Spring is in full bloom which means many of the fruits that went missing all winter are back, like pineapple! And pineapple is the lucky fruit that caught my eye this time 😉

    Winter was rough this year, for everyone across the U.S., except for Cali right? They had a dry winter which is not the best either but still better than the Midwest. A girl can dream… but I do have a plan to move there within a year or two. Fingers crossed! I am not meant to live in this cold climate anymore. Anyone else want to move to a warmer climate? Now that spring is here its time to get outside in the sun, enjoy the warmer weather, take long walks/runs and eat all the fruit your little heart desires. Pineapples are perfect for a vitamin C boost which my body is craving right now and they are also high in manganese. I added dark sweet cherries to this smoothie too! Talk about tart and sweet. But the combination of pineapple with cherries brings me back to childhood. Remember those orange creamy Dreamsicles in the popsicle section? Well this smoothie tastes just like a Dreamsicle. Without the added sugars, sweeteners and whatever else they throw in. This is nature’s pure sweetness here. It doesn’t get better than that! I added more coconut on top along with Gogi berries, the amazing superfruit. Did you know they are packed with not only protein but essential amino acids, over 20 trace minerals and Vitamin A?! I am so happy I finally gave in and bought them. You can find them at Whole Foods. I like the Navitas Naturals brand because they are certified organic, kosher, gluten-free, vegan, raw and non-GMO.     • 1 whole small pineapple
    • 1 cup frozen cherries
    • 1/3 cup unsweetened shredded coconut
    • 1–1.5 cups unsweetened vanilla almond milk (depending on your consistency preference)
    • 1 cup ice

    Instructions

    1. Cut pineapple into small chunks and add to blender.
    2. Add cherries, shredded coconut, almond milk, ice and blend thoroughly.
    3. Enjoy!

    • Optional add-ons: Coconut, Gogi Berries, Fruit, Granola, Hemp Seeds

    Chocolate Peanut Butter Power Bites

    Hello! Hope everyone had a lovely Easter weekend. I had family over at my house on Sunday for an early dinner so my weekend consisted of cleaning and preparing. It was the first time I had a family get-together at my house and surprisingly I wasn’t stressed at all. Probably because I was preparing all week and weekend but it was well worth it. It was a gorgeous day filled with laughs and plenty of Easter candy.

    I have an easy, vegan, raw, chocolate lover, no-bake recipe for you today! These power bites are simple, nutritious and packed with chocolatey goodness. When I first started the vegan lifestyle, it took a few weeks for me to adjust and figure out what ingredients work well together. Don’t get me wrong, I am learning everyday but peanut butter and chocolate rolled in coconut will always taste amazing, in my opinion! This is the perfect snack or even dessert to satisfy a sweet craving.

    Most of the time, I will take healthy snacks when I am out and about running errands and what not, so they need to be convenient and easy to throw in a bag or container. These little bites are perfect to hold me over! I added ground flaxseed and unsweetened cacao powder to this recipe for added benefits. I love sneaking in some extra power foods. No one will even notice! Flaxseeds are a great source of plant sourced omega-3 fatty acids which are key for fighting inflammation and they packed with fiber. Unsweetened cacao powder is full of antioxidants, minerals, and phytochemicals, the “feel good” chemicals that make us happy. I’ll take it!

    Raw, Vegan, No-Bake


    Ingredients

    Scale
    • 1/2 cup ground oats or oat flour (I used gluten-free)
    • 1/2 cup ground walnuts
    • 1/4 cup unsweetened raw cacao powder
    • 3 tablespoons ground flaxseeds
    • 1 teaspoon vanilla extract
    • 1/4 cup maple syrup
    • 2 tablespoons peanut butter
    • 3 teaspoons water
    • 1/4 cup unsweetened shredded coconut

    Instructions

    1. In a food processor, combine ground oats, ground walnuts, cacao powder and ground flax.
    2. Pulse until well mixed.
    3. Add vanilla and maple syrup.
    4. Pulse until well combined and mixture becomes sticky. You may need to wipe down sides with a spatula.
    5. Add peanut butter and water.
    6. Pulse a few times until it reaches a dough-like consistency.
    7. Transfer mixture to a medium-sized bowl and roll into approximately 10 truffle-sized balls.
    8. Add the coconut to a small bowl and roll balls in coconut until fully covered.

    Notes

    • Can be eaten immediately or stored in the refrigerator for a later time. Enjoy!

I starts out my morning with a bunch of supplements to eliminate parasites and bacteria and repair my gut while supporting my liver and gallbladder. Next I make a protein smoothie with vanilla whey protein powder and a custom supplement to support my deficiencies. And lastly my creamy dandy blend latte because I’m not drinking coffee right now.

This is what works for me right now! I also have gf toast usually from @awgbakery. I’ve had to eliminate so many things but it’s all for good reason, to reduce all the inflammation. I’m working with @lifelabwellnessco if you would like your own custom plan and testing 🙏🏼 should I share more videos like this?
