Hey loves!
As per usual, we have another What I Ate Wednesday! Plant based vegan style.
Hope you guys are having a great week, let’s get into my full day of yummy goodness.
HYDRATION:
Every single morning, water, water water, before anything else. Water is crucial in keeping my skin clear and smooth. I use this ginormous mason jar all day every day because no one cup is ever big enough?? Plus, I can measure out my water intake since I aim for 2-3 liters per day.
Before breakfast though, its always 24 ounces (3 cups) of filtered water, but today it was my Mermaid Lemonade instead of plain lemon water. So many of you have been loving it which makes me so happy! Don’t you feel like a mermaid?!
Then of course, a cup of coffee, with my fave Silk Almond Vanilla Creamer.
BREAKFAST:
I’ve been sipping away green smoothies with frozen cauliflower… it all started in last week’s What I Ate… and I can’t stop!
I love the creaminess it adds and no, you do not taste the cauliflower. I have yet to do a post on it, but I promise it’s coming. I’m a little backed up with posts right now so hang tight! In the mean time, here’s the recipe:
Coconut Cauliflower Green Smoothie:
2 big handfuls of spinach
1 ripe banana
1 cup frozen cauliflower
1/2 teaspoon maca
1/4 cup shredded unsweetened coconut
1 scoop Vega Protein and Greens
1/2 cup filtered water + 1/2 cup almond milk
** Top with more coconut and chia seeds
SNACK:
Later on while working, I snacked on chia overnight oats (in my new weck jar!) without the powdered peanut butter, but with a scoop of Justin’s Almond Butter
instead, plus raw cacao nibs
. SO GOOD.
LUNCH:
Lunch was the best – a new recipe for veggie tofu spring rolls that I’m working on! Can’t share all the deets yet… but I will say there’s a spicy almond butter sauce that is to die for. Aren’t they purrrrty?!
SNACK:
Baby carrots dipped in tahini sauce leftover from the weekend, because you can never have enough tahini sauce!
DINNER:
I was struggling hard to get my booty to the gym… I eventually got there and literally hated every second but felt better afterwards. Some days I’m just not feeling it AT ALL… you know how it goes. Especially when it’s so crowded because of spring break coming up. I go to XSport and 80% of the people are guys… most of whom think they are the next Arnold Schwarzenegger, with a lot of grunting and blue water bottles going on. I feel violated by creepy eyes most of the time. UGH. Can’t a girl just workout in peace? I basically make eye contact with no one when I’m there, except Terry lol. Thank god he doesn’t drink pre-workout or wear tight wife beaters. Okay, rant over.
As soon as I got home, I made a quick protein shake of water mixed with my fave vega protein & greens powder! Luckily, I made my ‘Spicy Kale and Quinoa Black Bean Salad‘ on Sunday night, to have for the week…. it saved me. I had two bowls because it’s seriously addicting.
Then, finished out the night with this uh-maze crunchy mint dark chocolate bar (found it at target!) along with a cup of Calming Magnesium Beauty Sleep Tea!
