Good morning!
Getting back into ‘What I Ate Wednesday’ posts after missing the last two weeks.
Life has been crazy busy over here, in a good way! I hope you guys are having a great week. Don’t forget to enter my two major giveaways happening right now, ending tomorrow.
- My $100 Whole Foods Giveaway in this Vegan Easter Basket post
- My Salad Power Giveaway (3 winners) in this 5 Vegan Travel Snack Ideas post
Alright, let’s get into my full day of yummy, plant based vegan eats!
HYDRATION:
Every single morning, before anything else, I drink a huge mason jar of filtered water (today, with 1/2 lemon). Water is crucial in keeping my skin clear and the texture smooth. I use this ginormous mason jar all day every day because no one cup is ever big enough for my water needs, and I’m not wasting a zillion plastic water bottles. Plus, I can measure out my water intake since I aim for 2-3 liters per day.
Sometimes it’s my Mermaid Lemonade instead of plain lemon water, (or my Turmeric Glow Lemonade). So many of you have been loving the Mermaid Lemonade though, which makes me beyond happy! #MermaidLife
BREAKFAST:
After oil pulling, flossing, brushing my teeth and drinking my lemon water, something tragic happened!
I go to make coffee since that’s the next step in my morning routine, only to realize I’m completely OUT. Not even a single coffee ground to spare. How did I let that happen?! UGH.
So instead, I made the ready-to-blend Cold Brew + Almond Energizer smoothie from Daily Harvest, until I could run to the store later. It basically tastes like a caramel frappuccino… yup. I blended in frozen cauliflower and this Vega Protein for extra plant power. Topped with raw cacao nibs!
Plus, a few of my no-bake peanut butter energy balls.

SNACK:
Later on, I sipped on one of these iced matcha lattes while working! If you follow along on insta stories and snapchat (glowingfridge) you would know I got some NEW matcha powder after finding out there are two different types: ceremonial grade and culinary. Ceremonial grade is much more vibrant in color and meant for drinking in teas, lattes etc. while culinary matcha is meant more for baking and sweets. Ceremonial grade is a little more expensive but tastes WAY better and is naturally sweeter. SO worth it. P.S. I froze the remaining glass in an ice cube tray to add in smoothies!
ICED MATCHA LATTE RECIPE: (makes one serving)
2 tablespoon hot water + teaspoon Aiya matcha powder
1 cup unsweetened cashew milk (or any plant milk)
2 teaspoons pure maple syrup (or agave)
handful of ice
In a small bowl, add matcha powder, then hot water. Whisk to form a matcha paste. Fill a tall glass or mason jar with ice. Pour in cashew milk, then stir in matcha paste and maple syrup, to taste. Enjoy!
Then I also snacked on chia pudding made with coconut milk, in my new weck jar! I didn’t eat the whole jar of chia pudding – probably only 1/3 of it. I can only eat so much chia pudding ha.
LUNCH:
Lunch was styled for the Salad Power Giveaway so it looks super purrrty! A glow bowl of purple and green kale, brown rice, lightly steamed broccoli, cauliflower & carrots with cubed tempeh and jalape?o Farmhouse Culture kraut. Plus a tahini lemon dressing (recipe here) with a Just Veggies Salad Power Juice. So yum!
SNACK:
Baby carrots dipped in my fave oil-free Engine 2 Hummus – the jalape? cilantro flavor!
DINNER:
After a booty workout at the gym, I was starved for dinner! It was another quick glow bowl (similar to lunch), with purple kale, steamed broccoli, quinoa and white beans, plus leftover dill cucumber sauce and a berry la croix!
Along with a cup of Calming Magnesium Beauty Sleep Tea later on, to finish out the night.

wait, i had NO idea there were two types of matcha?! i must have the culinary kind, it’s not sweet at all and i always forget to add sweetener until i take a sip and kind of cringe…haha
am also obsessed with cashew milk, it’s so creamy!
i made a sweet potato bowl for breakfast this week with nut butter and granola, which was delish, and gluten-free apple spice blondies made with coconut flour – SO good!
