Hope you’re having the best week so far. Summer has arrived here in Chicago and you know what that means… all is well in the world again 😉
Here’s all my noms from yesterday!
HYDRATION:
Can’t go without lots of water first thing. Every morning! Water is imperative for keeping my skin clear and smooth. I use this ginormous mason jar all day every day because I can measure out how much I’m drinking (I aim for 2-3 liters per day) and I’m not wasting plastic water bottles.
Today it was plain filtered water using this water filter which is a zillion times better than Brita, but any filtered water is better than tap so do what you can. Sometimes it’s lemon water, sometimes its Mermaid Lemonade but when I’m too lazy, plain water does the trick.
Still going strong with no caffeine… even though I really REALLY want coffee. Man this coffee addiction is real. I rely on caffeine more than I thought… but teecino is saving me and giving me a fake fix. Teecino is caffeine-free herbal coffee (brewed the same way as regular coffee) and smells/tastes heavenly (I love the vanilla nut flavor!) I know its a zillion times better for my bod than acidic caffeine which makes it worthwhile as I try to get my hormones back in balance. I frothed it up with a splash of hazelnut So Delicious creamer and cinnamon (helps to balance blood sugar).
BREAKFAST:
Breakfast was a NEW smoothie recipe that posted yesterday – my ‘Creamy Cauliflower Coconut Smoothie’ and tasted like melty coconut ice cream… YUM. Obsessed with this blend. Check out that smoothie spillage tho.
SNACK:
A few of my usual no-bake pb energy balls, with vanilla Vega Protein and Greens powder instead of powdered peanut butter, extra chia seeds and without the coconut sugar. You guys have been loving my lemon coconut energy balls! I see you making them 🙂
LUNCH:
Lunch was this gorgeous bowl of kale, crumbled tempeh, chickpeas, a little quinoa, steamed broccoli, kale sprouts and the Cucumber Dill Vegan Tzatziki Sauce from my Greek Glow Bowl that I can’t get enough of. Fresh dill is where its at.
SNACK:
Pre-workout snack: Health Warrior Vanilla Almond Chia Bar. So yummy and way more filling than a larabar!

DINNER:
Terry joined me after the gym for a variation of my Crunchy Thai Noodle Bowls with temeph instead of edamame, zoodles, carrot noodles, rice noodles, baby kale, cashews and the spiciest almond butter sauce. This is one of his favorites! You have to try these bowls. We started watching The Handmaids Tale on Hulu and my eyes are glued to the screen while my mouth is open in awe during the entire show. No joke. If you need a new show to watch, check that one out for sure.
DESSERT:
I made Flourless Peanut Butter Zucchini Brownies from Hummusapien and they were yummy, although they kinda fell apart… don’t think I let them cool for long enough. Super easy to make though and hit the sweet spot.
Plus a cup of Calming Magnesium Beauty Sleep Tea before bed!
