If you are a human being, chances are you like popsicles when it’s hot outside.. right? If you don’t like popsicles then… you better have some kind of explanation.. Haha. Summer months call for brilliantly refreshing treats to cool you off. And to wake up your taste buds. These 3-ingredient Mango Ginger Pops do exactly that! Mango and fresh ginger make quite the combo. Think of refreshing, sweet, and creamy with a little ginger zing. I use fresh ginger in so many recipes now! Not only is ginger fabulous for your immune system, it’s super friendly on your digestion too. I love the flavor it adds, as well as it’s healing and therapeutic properties. Talk about a detox for your whole body 🙂 Ginger is wonderful in fruity popsicles, and is perfect for green juices, stir frys and marinades.
And mangos. Oh how I love them. Slowly, mangos have started to become one of my favorite fruits. I seriously never tried mangos until I went vegan. I thought I wouldn’t like them for some odd reason. We didn’t grow up eating them so I always passed them by at the store. Maybe because I had no idea how to eat them, or cut them. I was missing out! I wish I tried them earlier. Mangos taste like candy, for real. I am officially becoming a fruit monster.
Yesterday, Marty and I were out in the sun for a few hours and once we got home, something cold/fruity sounded sooo good! I knew it was time to make some popsicles. My mind started going and I thought why not combine fresh mango and fresh ginger to make Mango Ginger Pops?! So I did just that! I used almond milk for this recipe to get a creamier texture but you could use water to make it less creamy, or even coconut milk if you want your pops really rich. This recipe makes enough for 6 popsicle molds.
I don’t think I will ever buy store-bought popsicles again! There is no point when they are so simple to make at home, in your blender, and you know every ingredient that goes in those popsicles molds. It has become harder and harder for me to trust any product at the grocery store. Unless its fruits or vegetables of course. And even most of those have to be bought organic! Ugh. You can find me reading every single ingredient pretty much.. I don’t want to put any weird ingredients in my body. Like ever. I am sure there are perfectly healthy popsicles in the freezer section with minimal ingredients but nowadays I would rather make up my own yummy recipes made from using whole foods. Mango Ginger Popsicles

Description
Brilliantly refreshing, creamy and healthy vegan popsicles!
Ingredients
- 2 cups fresh mango chunks
- 2-inch piece of fresh ginger root, skin removed and roughly chopped
- 1.5 cups almond milk (add more if needed)
Instructions
- Combine all ingredients in a high speed blender. Blend until smooth.
- Pour mixture into popsicles molds (will fill 6 popsicle molds).
- Insert popsicle stick and freeze for at least 4 hours or overnight.
- To remove from popsicle mold, run under warm water for 30 seconds and it should pop out!
- Enjoy!
Notes
- Almond milk can be replaced with coconut milk or water!
