    Vegan Reese’s Peanut Butter Eggs

Deliciously homemade and "healthier" Vegan Reese's Peanut Butter Eggs, using only 5 ingredients! #vegan #easter #treats #reeses

Just in time for Easter weekend! Nostalgic Vegan Reese’s Peanut Butter Eggs! Oh the memories…!

Sometimes you need an easy Easter treat that is vegan and that you know people will love. They are SO easy and very hard to mess up haha. Also, peanut butter and melted chocolate… need I say more?! Crowd-pleaser for sure.

These copycat Reese’s peanut butter chocolate eggs will melt in your mouth and you’ll be craving them for days. My mouth is watering just dreaming about them… pretty sure I could eat them all in one sitting.

These heavenly peanut butter eggs are perfect for a “healthier” alternative to store bought sugar-laden and processed candy or Easter treats. They don’t taste fake! They taste real and fresh and delightful. I much prefer to make my own sweet treats these days because I can control the sugar and I know exactly what is in them!

Ready in 35 minutes, these sweet chocolate treats are sure to please!!

You start by mixing the peanut butter, coconut flour and maple syrup (I used my favorite sugar-free maple syrup from ChocZero), until the mixture turns into a doughy-like texture. Then you roll into balls and press down to form an egg-like shape. You freeze them to set for 10 minutes. Then melt the vegan chocolate chips, dip the eggs in to drench them in chocolate-y goodness, freeze for 15 more minutes and dig in. See? Super simple.

    Description

Deliciously homemade and “healthier” Vegan Reese’s Peanut Butter Eggs, using only 5 ingredients!

    Ingredients

    Scale

3/4 cup runny natural peanut butter

2 tablespoons maple syrup (I use this one)

    1 tablespoon coconut flour

    1/2 cup vegan chocolate chips

    1 teaspoon coconut oil

    Instructions

Line a baking sheet or a flat plate with parchment paper.

In a mixing bowl, start by mixing the peanut butter, coconut flour and maple syrup, until the mixture turns into a doughy-like texture.

Take 1 tablespoon of the mixture and roll into a ball, then press down to form an egg-like shape.

Place on the parchment paper. Recipe will make 8-10 eggs depending on the size you make them.

Freeze them to set for 10 minutes.

Next, melt the vegan chocolate chips with the coconut oil in the microwave in 30 second intervals. To prevent burning, mix the chocolate in between the intervals.

Dip the eggs in to drench them in chocolate-y goodness and lay flat back on the parchment paper.

Freeze for 10-15 more minutes to set. Then dig in!

    Notes

Store in the refrigerator or freezer to prevent melting!

Keywords: healthy, vegan, dessert, reeses, chocolate, peanut butter, cups, eggs, holiday, copycat

Can I use oat flour instead of coconut? I am allergic to coconut!

Whipped these up to add to my freezer for healthy Easter treats. So simple to pull together and a wholesome ingredient list I can get behind! My batch made 12 eggs. I sprinkled half with some pink Himalayan salt. Yum!

what are you guys up to today?! I’m installing our new shower filter that I can’t wait to share about, running errands, cleaning, thinking about dinner, the usual Sunday things 💗💗💗
HANDLE NAME CHANGE!! I’ve been wanting to do th HANDLE NAME CHANGE!!

I’ve been wanting to do this for a while as a fresh start with all the changes to my “brand” in the last year. It feels right to just use my name 😀 (fun fact: I haven’t taken my hubbys last name yet because of business paperwork that I’m too lazy to figure out 😅 name changes are complicated)

@theglowingfridge started out of my love for the plant based lifestyle but so much has changed in the last 9 years and I’ve been itching to update. Nothing else will change and my blog will still remain as is, if you still use my recipes and such. Love you all and thank you for supporting me through all these changes 🤍🤍🤍

what I eat for gut health, happy hormones, healthy what I eat for gut health, happy hormones, healthy skin & hair, and to be a patient mama 🖤

When my blood sugar is on a nasty rollercoaster, I’m not the best mama that I know I should be for my girl. I’m more irritable and short. So I prioritize protein, healthy fats and carbs at each meal. This helps me feel balanced and provides energy to play and chase after her all day! I need all the fuel I can get.

- breakfast tacos with pastured eggs
- collagen king coffee ☁️
- leftover homemade chicken fried rice
- swedish meatballs & gf pasta & green beans
- my homemade tahini maple cookies (I have a reel with the recipe!!) but I’m truly addicted 🍪

    I don’t get ready everyday… But when I do I f I don’t get ready everyday…

But when I do I feel better, duh! And more confident. More productive. Happier in general. Of course I have super lazy days but I try to get myself together because I’m more likely to leave the house, you know mamas? I hate when people ask “why do you get ready if you’re home all day”..

I’m sharing different content like this because I feel like it and don’t want to be stuck in a box 😀

passes & smashes for gut healing ❤️‍🩹 I passes & smashes for gut healing ❤️‍🩹

I have many more passes too.. extreme diets, too many supplements, gluten, juice cleanses, eating too fast and not chewing enough.. the list goes on!

Gut healing takes a multi-faceted approach and it’s never just one supplement to heal or one thing to do.

It takes time, patience and grace! And working alongside a practitioner you feel called to 🙏🏼
