Let’s get into my full day of plant based eats.
HYDRATION:
I always start the day with lots of water! Every single morning, before anything else. Water is imperative for keeping my skin clear and smooth. I use this ginormous mason jar all day every day because I can measure out how much I’m drinking (2-3 liters per day) and I’m not wasting plastic water bottles.
Sometimes it’s plain water, sometimes it’s lemon water, sometimes its Mermaid Lemonade, but today it was blue majik lemon water, just to make my morning a little more fun! I added in a sprinkle of blue majik E3Live powder in a mason jar filled with room temperature filtered water (using this water filter
) then mix it up with my frother
and squeeze in half a lemon.
BREAKFAST:
Breakfast was a green power smoothie with all the goodness! Recipe below 🙂 One new thing I’ve been adding to my daily morning routine is one tablespoon of blackstrap molasses with breakfast. Molasses is a great source of iron, calcium, magnesium and vitamin B6. I’m always trying to incorporate more iron into my days, being vegan and all.
Also sipped on a cup of half herbal coffee/half regular coffee and it was SO good! I’m trying to quit coffee… slowly… and teecino is seriously legit. It’s a caffeine-free herbal blend, brewed the same as coffee, and smells/tastes heavenly (I love the vanilla nut flavor!). You guys know how much I love coffee but for me its more about the ritual than the actual caffeine so teecino has been the most amazing replacement and I’m actually liking it more because I know its not acidic in my body like coffee is. Green Power Smoothie:
2 handfuls spinach
1 ripe, frozen banana (read my How To Freeze Bananas post!)
1 cup frozen cauliflower florets
1/4 avocado
1 scoop Vega Protein and Greens
1/2 teaspoon maca powder
1/2 teaspoon cinnamon
1/2 cup cashew + 1 cup filtered water
SNACK:
I’m all about the toast lately! Unicorn Toast especially… but today was peanut butter fluff on ezekial bread. I mixed the PBFit peanut butter powder with water for a fluffy peanut butter spread and topped it with extra cinnamon and cacao nibs. Yumm.
LUNCH:
Lunch was glow bowl of kale, grilled carrots, brown rice and steamed broccoli with my fave lemon tahini dressing. I also grazed on a few pieces of tempeh while making this bowl so I didn’t add any extra plant protein.
SNACK:
Fresh watermelon and these fun new crunchy rice rollers that I found on amazon! I ate them plain but plan on spreading a little almond butter on them next time. They’re a fun and crunchy snack if you’re looking for something new!
DINNER:
An easy bowl of yummy leftovers… kale with a mix of sweet potato, beans, corn and quinoa, topped with mashed avocado!
