Good morning!
How’s your week going?! Happy What I Ate Wednesday! We have lots of yumminess happening today, including these tasty little Sejoyia Coco-Roons 🙂
HYDRATION:
My morning hydration was a cup of water with liquid iodine – a new addition to my routine that I’m trying. Read more about that here! I won’t go without drinking tons of water first thing in the morning. It’s habit to me now, but I used to need friendly reminders to get my water in before diving into breakfast, which is why I share it here with you guys! After that I made iced passion fruit green tea from Pique Tea Crystals (pictured above). So refreshing and a nice little pick-me-up.
BREAKFAST:
I start to crave more carbs in my luteal phase, and for good reason – our bodies need the extra energy! So I opted for avocado toast using the Angelic Bakehouse sprouted bread (which I love). Then I also made a protein smoothie to tide me over until lunch.
Creamy Cauliflower Protein Smoothie:
- 2 handfuls spinach
- 1/2 frozen banana
- 1/2 cup frozen cauliflower
- 2 tablespoons chia seeds
- 1 tablespoon sunflower seed butter
- 1/2 scoop vanilla Vega Sport vanila protein
- 1.5 cups unsweetened vanilla almond milk
- 1/4 cup filtered water
LUNCH:
Lunch was the yummiest soup and salad! I picked up the Carrot Ginger soup from Trader Joe’s and heated it up in a cup, paired with Mary’s Gone crackers. My salad had spring mix, cucumber, chickpeas, cabbage, coconut and crushed almonds, along with my Spicy Magic Green Sauce for dressing – it can be used for anything!
SNACKS:
Let’s talk a little about snacks. What does your work day snack look like? Mine usually consists of an apple with almond butter, but when I want something more exciting, I can’t get enough of the Sejoyia Coco-Roons! I picked them up at Walmart as they’re new to the gluten-free aisle. I will say, it’s hard to abstain from eating the whole bag! Coco-Roons are a healthier, clean-eating, non-GMO treat. Think superfood cookie meets lots of cashews and coconut, sweetened with pure, organic maple syrup (aka no refined sugar!). Coco-Roons satisfy my sweet tooth cravings in a guilt-free manner with healthier ingredients that are the yummiest!
These superfood cookies are organic, gluten-free, paleo-friendly, vegan, and kosher. My favorite flavors are Brownie and Lemon Pie! Lemon is light and refreshing, similar to airy lemon cake and brownie is made with organic cocoa and has a deep, rich, chocolate-y flavor! Take advantage of the $0.75 off ibotta offer when you purchase 1 Sejoyia Coco-Roons at Walmart, while supplies last! Also, get an additional $.50 for redeeming the rebate on 3 different shopping trips.
Pack them as a snack on-the-go.
Make them into a cookie sandwich with almond butter in the middle!
Or eat them plain when you have a cookie craving 🙂
DINNER:
I made a big batch of red lentil pasta with broccoli, zucchini, artichoke, tomatoes and green peas!
Plus my nightly cup of Calming Magnesium Beauty Sleep Tea before bed!
